When it comes to ordering in-flight catering, the most important tip is: The earlier you place your order, the better the result and the lower the cost. Advance notice helps avoid rush fees, allows chefs more time to source specialty items, and ensures that your meals are consistent rather than improvised at the last minute. Private aviation moves quickly, and ordering even a few hours earlier can make a noticeable difference in both pricing and quality.
The more details you can share upfront, the smoother the entire process becomes. It helps to know whether there will be a flight attendant onboard, the type of galley equipment available, and whether you need meals packaged individually, in bulk, or “ready to serve” for a self-managed cabin. It's also helpful to know small details like whether you prefer sauces and garnishes on the side to prevent sogginess, especially for longer legs.

5) What Is Your Most Popular Menu for Long-Haul Flights?
On long-haul flights, breakfast is consistently the most requested meal. Many overnight flights cross multiple time zones, and passengers almost always want a fresh, energizing breakfast course to wake up to before landing.
Since certain items, especially eggs, don’t always travel well, many flight attendants request raw eggs and simple onboard supplies so they can prepare them fresh in the galley. This small adjustment helps maintain quality, aroma, and texture while giving passengers a “just cooked” experience in the air.
For dinner service on long sectors, we often recommend aviation-friendly entrées that hold moisture and reheat beautifully, such as braised short ribs, miso-glazed salmon, or chicken roulade.
6) Fun Stories or Narrative to Share
We once handled a 125-passenger VVIP order with barely 24 hours’ notice after their former provider fell through. Not only did we have to produce multiple courses for 125 people in 24 hours, but we also had to arrange deloading and dishwashing for the return of their serviceware with no time to spare.
The stakes were very high, and it was one of the most stressful missions we’ve ever taken on, yet also one of the most rewarding. Everything came together, the flight departed happy and on time, and it reminded us why we love the challenge of private aviation catering.
7) What Are Your Favorite Restaurants in the World?
Many of our favorites are in New York City. Four Charles still holds the title for the best burger in the world in my book, and Sartiano’s is great for Italian. COTE is fantastic for Korean barbecue.
Outside of NYC, Maple & Ash in Chicago definitely ranks in my top 5 all-time restaurants.
